These coconut and lemon kisses are delightful and easy to make, and so flavored they are really delicious!
They turned out a bit crooked because, sorry, I didn’t have time to weigh each piece of dough and make them equal, although during cooking they might deform a little (okay, deforming seems excessive, they’re still cookies, right?!)
Lemon and coconut treats are perfect even for summer: they are easy to prepare and very fresh to serve even after lunch!

Ingredients
- 2 1/2 cups flour
- 2/3 cup sugar
- 7 tbsps butter (soft)
- 2 eggs
- 1 tsp baking powder
- 1 tbsp lemon zest (grated)
- 1 pinch salt
- 7 oz apricot jam
- 5 tbsps limoncello
- to taste grated coconut (rapè)

Steps
1) In a bowl, I place the soft butter (just take it out of the refrigerator at least 1 hour in advance) and the sugar and mix well with a spatula to obtain a soft and homogeneous cream.
2) Now I add the room temperature eggs and with a whisk, I incorporate them into the mixture until it becomes lighter.
3) I grate the zest of an organic or untreated lemon and add it to the dough.
4) I sift the flour with the instant baking powder and add them to the already made mixture, also adding a pinch of salt.
5) I mix very well with a spatula and make small balls the size of a cherry (as you can see, mine are a small cherry and also a large Vignola cherry) and as they are formed, we place them on a baking tray lined with parchment paper.
6) Now all that’s left is to bake in a preheated oven at 350°F, baking for 8/10 minutes or according to your appliance’s characteristics.
7) Follow the cooking because they color quickly, so as you see, the colored outer edges are ready, and they need to be left to cool.
8) While the coconut and lemon flavored kisses cool, in a pot, we let the apricot jam melt, and then off the heat, add the limoncello and mix well to have a sweet and fragrant cream.
9) We dip each half kiss and pair them with another, then roll them in the grated coconut, making sure they are well covered by the coconut flakes.
10) Continue until all the mixture is used up, and the coconut and lemon kisses are ready to taste!

To flavor the coconut and lemon kisses, we can use, besides limoncello or lemon liqueur, orange blossom water, an orange liqueur and instead of apricot jam, we can use lemon or citrus marmalade… Anyway, they are delicious and great as end-of-meal treats or snacks!
