Coconut Ghoriba, traditional cookies from Algerian, Moroccan, and other Arab countries.

The dough of ghoriba is a classic shortcrust with flour, sugar, and butter, with almonds as the base aroma.

They are crumbly and served with mint tea and/or Arabic coffee… In my small way, these shortbread cookies accompanied a very fragrant Twinings Flavoured Black Tea infusion!

Coconut Ghoriba

Ingredients for COCONUT GHORIBA RECIPE

  • 1 medium egg
  • 2.1 oz powdered sugar
  • 2.8 tbsp neutral seed oil
  • 1 cup semolina
  • 2.1 oz shredded coconut
  • 3 tbsp powdered sugar
  • 2 tbsp orange flower water

  • Baking Sheet
  • Kitchen Scale
  • Bowl
  • Spoon
  • Parchment Paper

FOR THE PREPARATION OF THE COCONUT GHORIBA RECIPE

  • In a bowl beat the egg with powdered sugar and the neutral-flavored seed oil.

    In a different bowl mix the fine semolina and the coconut, adding the powders to the liquid and blending them well together.

  • Take small amounts of the mixture, press well, and with the palms of your hands make many balls about the size of a walnut

  • Mix the powdered sugar with the orange flower water and put a little on top of each coconut ghoriba, then arrange the cookies neatly on a baking sheet lined with parchment paper.

  • Bake the coconut cookies in a preheated oven at 320/338°F for about 15 minutes.

    Once cooked, let them cool and serve them for a homemade snack..
