Cold Gnocchetti with Vegetables, Tuna, and Corn today….

Cold gnocchetti or malloreddus are a famous type of pasta typical of that beautiful island, Sardinia!
They are made with semolina and water and the most famous sauce paired with them is sugo alla Campidanese with tomatoes, sausage, and garlic, truly a delicacy!

Today I prepared them quickly with some grilled vegetables I had in the freezer, corn that Andrea loves, and the classic tuna often used in summer for easy pasta salads. But let’s go to the kitchen and prepare the recipe for cold gnocchetti with vegetables, tuna, and corn!

How to enrich the seasoning of cold gnocchetti or malloreddus?
It’s a very tasty pasta to which you can also add some black olives or use canned mackerel instead of tuna and much more!

Ingredients for COLD Gnocchetti with Vegetables, Tuna, and Corn

  • 10.6 oz Sardinian gnocchetti
  • 6.3 oz Canned Tuna in Oil
  • 4 ready-made grilled bell peppers
  • 4 ready-made grilled eggplants
  • 4 tablespoons corn
  • to taste Extra Virgin Olive Oil
  • 1 sprig chopped parsley

Preparation of COLD Gnocchetti with Vegetables, Tuna, and Corn

  • Put a nice pot of salted water on the stove.Slice the grilled vegetables into strips while they are still cold.

  • In a bowl, place the tuna and break it into pieces.

    Add the drained corn and pat it dry with a paper towel.

    Cook the Sardinian gnocchetti and once drained, let them cool under water or slowly in a bowl with a little oil.

  • Combine pasta, corn, vegetables, and tuna and mix well to blend all flavors.

    Adjust the salt and sprinkle with chopped parsley.

  • Serve the recipe of cold gnocchetti with vegetables, tuna, and corn at the table, and enjoy your meal!!

Tips and Notes

Regarding fresh tuna, I have read from several sources that when we cook it and serve it on the table, we are also consuming mercury, which is now a proven presence and very risky for our health, especially for children and pregnant women.

To address this problem, which should not be underestimated, it is advised to limit the consumption to no more than one serving per week of these large fish like tuna, swordfish, and shark, and it is also recommended to alternate them with smaller fish species such as sardines, mackerel, sea bass etc.

Canned tuna is considered safer, as the fish used are generally smaller and younger, thus having a limited mercury content.
