This version with arugula, bresaola, and parmesan shavings is light yet tasty, ideal for lunch breaks, picnics, or a summer meal on the terrace.
Very easy to prepare in advance, this recipe is perfect for those who want to eat well without spending too much time in the kitchen!
As for the weight of the ingredients, even for this main dish idea, I suggest adding them to personal taste: for example, I added a lot of ARUGULA which is very beneficial because it is rich in calcium, potassium, folates, vitamin K, A, and C and it also has a strong antioxidant and anti-inflammatory action!

- to taste rice (I used what I had at home, Carnaroli)
- to taste arugula
- to taste bresaola
- to taste parmigiano reggiano (or parmesan or pre-shaved raspadura)
- to taste lemon zest (organic or untreated)
- to taste lemon juice (measure it carefully, otherwise it will become too acidic!)
- to taste salt

Steps
1) Simple recipe for a very tasty main or single dish that I enriched by adding a varying amount to taste, and I advise you to do the same, satisfying your personal taste!
2) So in plenty of salted boiling water, I cook the rice for the time indicated on the package.
3) If you want to speed up the preparation of this seasoned and tasty rice, you can also use those ready-made basmati rice pouches. However, thinking it over, these ingredients could also be suitable for seasoning black Venus rice, but also spelt, couscous, bulgur, barley, in short, it’s a seasoning for grains and rice in general!
4) Once the rice is boiled, I drain it and quickly run it under cold water to immediately stop the cooking and have firm and well-cooked grains!
5) While it cools completely, I chop the washed arugula and pat it dry with paper towels along with the bresaola slices.
6) I put the rice in a fairly large bowl and add the arugula and bresaola pieces, mixing everything well.
7) Then I add a little lemon juice and lemon zest and then season with extra virgin olive oil and fine salt.
8) I mix and cover with plastic wrap, then place the dish in the fridge until it’s time to taste this definitely fresh and very, very tasty rice!
