The cold sweet roll is a delicious semifreddo that encloses a filling of cream and mixed berries which must be placed in the freezer for at least 2/3 hours as soon as it is made.
This semifreddo with red fruits like blueberries and raspberries once solidified should be covered with dark chocolate melted in a bain-marie or microwave, and then the whole thing should be rolled over coarsely chopped dry biscuits like Oswego.
This quick semifreddo roll with FROZEN BERRIES should be put back in the freezer for about another hour and then enjoyed!
The summer recipe idea is pleasant and can also be made with other fruits that go well with chocolate, like peaches, pears, cherries, fruits maybe first sautéed on the stove to make them tender and juicy and then, when cold, joined with whipped fresh liquid cream.

COLD SWEET ROLL Ingredients
- 2 cups fresh whipping cream
- 6 tbsp powdered sugar
- 2 1/2 cups berries (frozen)
- 6 oz dark chocolate (to melt and wrap the cold roll)
- 7 oz dry biscuits (coarsely chopped to sprinkle over the chocolate)

Steps
1) As mentioned above, I used FROZEN BERRIES which I put in a pan and let them soften slowly over low heat, stirring the frozen mix several times.
2) Let them cool completely and add powdered sugar.
3) Whip the FRESH LIQUID CREAM using electric beaters and then add the berries, including a bit of the juice that will form in the pan.
4) Use gloved hands to place the cream and berries on a sheet of baking paper and try to form a roll to be immediately placed in the freezer.
5) After about 30 minutes, take out the cold sweet roll and better compact the cold summer roll with berries, then wrap it in baking paper and also in aluminum foil, making a nice candy shape to place immediately in the freezer, leaving the cold summer sweet for at least 2/3 hours.
6) Once the time has passed, melt the dark chocolate and spread it on a tray lined with baking paper; then place the frozen roll and completely cover it with the melted dark chocolate sauce.
7) Roll the cold sweet roll with red fruits in the chopped dry biscuits and then re-wrap the sweet in baking paper and place it back in the freezer for at least another hour.
8) Take out the sweet with red fruits at least 15/20 minutes before tasting and…enjoy!

1) I must be honest, I found it a bit tricky to press the dry biscuits onto the melted dark chocolate coating, and I may have understood why…
Because not very cleverly, I chopped the biscuits too coarsely, and I recommend chopping them into smaller and fairly homogeneous pieces, so you will do a better job than I did, SORRY!
