The weather is very changeable: yesterday it was really hot, very hot, while today the sky is changing and at home it is already quite tiring to stand at the stove to prepare foods that require long cooking and/or preparations. So today, in my kitchen, only quick and very easy dishes to make, like this tasty one-dish meal with potatoes, olives and anchovies… here are the quantities for the cold tuna loaf!

COLD TUNA LOAF

Ingredients RECIPE COLD TUNA LOAF
- 1.1 lb already-boiled potatoes
- 12 oz tuna in oil (drained)
- 3 oz black olives
- 5 anchovies in salt
- 2 tbsp capers in salt (desalted and chopped)
- to taste salt and pepper

FOR THE PREPARATION OF THE RECIPE COLD TUNA LOAF
Boil the cleaned potatoes starting from cold water for the time necessary so that a wooden skewer can pass through them freely.
Personally I had leftovers from yesterday and after slightly reheating them in the microwave…
Peel them and, while still warm, pass them through the potato ricer collecting the puree in a bowl.Then add the TUNA drained and flaked with the tines of a fork.
Also add the desalted chopped capers, the BLACK OLIVES cut into pieces and the anchovies also cut into small pieces.
Adjust salt and pepper, place the mixture on a sheet of parchment paper and then roll it tightly and evenly like a candy.
Put the cold tuna loaf in the refrigerator for at least 2 hours to firm up well.
When ready, remove the parchment paper and slice the cold tuna loaf into even slices.
Serve it on the table with a salad and a few dollops of mayonnaise/ketchup/mustard according to your personal tastes. Enjoy!!!

Tips and notes
Here is a perfect dish for the coming summer that you can make in advance and customize by adding more capers or olives… It can be prepared in advance — in fact IT SHOULD be — because the taste is definitely better!
