How time flies, darn it: yesterday I was preparing the cotechino and now we are already in the middle of Carnival… it’s not fair, eh!!!
Among all the fried sweets typical of the Carnival period popping up everywhere, today to avoid too many calories, I made a shortbread and with the cutters I got I made these crunchy and delicious masks!
In some I put sprinkles in others some decoration with the royal icing but mostly I left them plain adding a little powdered sugar just before eating.
They are cute, I must say that these molds for making masks (which I will indicate among the recipe tools) are just perfect, and the shortbread shapes very well and comes out flawlessly, highly recommended!
A simple but effective treat, I believe!
This 2025 Carnival begins on February 16 and ends on March 4, Ash Wednesday, thus preceding the start of Lent.

INGREDIENTS
- 3.5 oz granulated sugar
- 1 egg
- 2 egg yolks
- 2 cups all-purpose flour
- 9 tbsp butter
- 1 pinch salt
- as needed lemon zest (organic or untreated)
- as needed colored sprinkles
- as needed sugar flowers
TOOLS
- Rolling Pins
- Parchment Paper
- Molds
- Stand Mixers
FOR THE PREPARATION OF THE SHORTBREAD MASKS RECIPE
then the softened butter, sugar, flour, grated lemon zest, pinch of salt, egg yolks, and whole egg.
Mix everything well and let it rest in the refrigerator for 30 minutes.
Roll out the shortbread without baking powder between two sheets of parchment paper to a thickness of about 1/4 inch MAYBE (I never get the thickness right eh eh) and with the appropriate molds make many masks that I arrange already on the baking tray lined with parchment paper.
Brush some with water and immediately add sugar sprinkles and bake at 350°F until you see the Carnival shortbread masks golden brown.
Let cool and proceed to make the royal icing to decorate in another way these crumbly and simple cookies for the whole family!
