An easy summer dessert recipe today with the country-style cake with seasonal fruits!
It’s very simple and you can use peaches, apricots, strawberries, but also plums, greengages, cherries, pineapple, and orange!
Clearly, it’s a dry dessert, not a soft cake or a bundt cake, and if you want it more gourmet and indulgent, add a scoop of vanilla ice cream or a creamy sauce, and I’ll leave you the recipes below!

Ingredients for COUNTRY-STYLE CAKE WITH SEASONAL FRUITS
- 2 cups flour
- 1/2 cup butter
- 1/4 cup powdered sugar
- 1 egg
- 1 pinch salt
- 1 lemon (zest, preferably organic or untreated)
- as needed milk (or water if the dough is too difficult to handle)
- as needed apricots
- as needed peaches
- as needed pineapple
- as needed strawberries
- 2 tablespoons brown sugar
- as needed powdered sugar (before tasting)

PREPARATION FOR COUNTRY-STYLE CAKE WITH SEASONAL FRUITS
In a bowl or robot, I mix the flour, a pinch of salt, and powdered sugar.
I also add cold butter in cubes and pulse the robot intermittently so it doesn’t heat up too much!
Or, I could mix everything in a bowl and rub the ingredients with fingers, creating a sandy blend.
I also add the grated lemon zest if I like it, and mix everything well.
Finally, I add the slightly beaten egg and mix everything well to obtain a pliable dough block, adding a touch of milk/water if needed!
I wrap everything in food wrap and let it rest in the fridge for about 30 minutes.
Preheat the oven to 356°F and line a baking sheet with parchment paper.
Wash and slice the chosen fruits, removing pits, and cut them into slices, squares, or…
After resting, roll out the dough with a rolling pin and arrange the fruit, leaving an outer edge of about 2 inches empty.
At this point, take the fruitless dough and fold it inside, partially covering it, but just look at the photo!
Sprinkle the fruit with brown sugar and bake the rustic cake with seasonal fruits for 35/40 minutes, depending on the characteristics of your home oven.
Once cooked, let it cool a bit and taste!
