COUNTRY-STYLE CHICKEN WITH PEPPERS AND POTATOES

The country-style chicken with peppers and potatoes is a superb and colorful dish with white meat (you could also use turkey if you want..) rich in flavor with lots of aromatic herbs and perfect for a rustic and succulent family meal!

You can vary the vegetables, maybe add onion wedges, increase or modify the quantity of aromatic herbs and the result will still be very appetizing!!

Ingredients for COUNTRY-STYLE CHICKEN WITH PEPPERS AND POTATOES RECIPE

  • 5 slices chicken breast
  • 2 red peppers
  • 1 yellow pepper
  • 2 cloves garlic
  • 4 potatoes
  • to taste extra virgin olive oil
  • 1 leek (only the white part)
  • to taste aromatic herbs (for me parsley, basil, bay leaf, rosemary)
  • 10 cherry tomatoes (or grape tomatoes)
  • to taste paprika and chili
  • to taste green olives
  • to taste vegetable broth
  • to taste salt and pepper

FOR PREPARING THE COUNTRY-STYLE CHICKEN WITH PEPPERS AND POTATOES RECIPE

  • In a large saucepan, add a drizzle of extra virgin olive oil and when it sizzles, add the crushed garlic cloves and as soon as they are golden, remove them from the preparation.

  • Also add the chicken breasts cut into pieces and quickly brown them.

    Remove them from the pan and set aside.

  • Wash the peppers, remove the stem and internal filaments, slicing them into strips.

    Peel the potatoes and cut them into chunks.

    Cut into rings only the white part of the cleaned and washed leek.

  • In the same saucepan where the chicken was browned, add the peppers and tomatoes.

  • Also add the pieces of chicken, season with salt and pepper and sprinkle everything with aromatic herbs and spices, mixing well.

  • Let cook for about 10 minutes, then add the chopped potatoes, adding a few ladles of vegetable broth and continue cooking for about 20 minutes.

  • Shortly before turning off, also add the green olives, which will further enrich the preparation.

  • At the end of cooking, taste to check the seasoning and serve the chicken with peppers and potatoes steaming hot on the table!
