CREAMY EGGS IN THE NEST

The creamy eggs in the nest are more of a combination of ingredients than a recipe; it’s a simple idea that I can’t quite define as a rich side dish or, with small additions, a complete meal!

I used some chard but we can use spinach or dandelion greens, I used a whole egg, whisking the whites with a pinch of parsley and placing the yolk in the nest, but we can also add some mashed potatoes, what do you think?

If we want to enrich it, instead of adding a little grated Parmigiano Reggiano before putting it in the oven, we can add some scamorza, provola, or Galbanino, but also some slices of speck to our liking.

I left them in the oven for just a few minutes 3/4 with the lower flame and 2/3 with the grill to get a creamy and runny yolk, but it’s not mandatory!!!!!!!!!!

  • 14 oz chard
  • 2 eggs
  • 2 tbsp extra virgin olive oil
  • 1 tsp grated Grana Padano
  • 1 pinch chopped parsley
  • to taste salt

FOR THE PREPARATION OF CREAMY EGGS IN THE NEST

  • so I clean the chard, removing the stalks that I might dip in beaten eggs and breadcrumbs and fry!

    I wash and boil them for 5/6 minutes in salted boiling water, then let them cool completely.

  • Line the baking tray with parchment paper and with my hands, I form nests with the pre-cooked vegetables.

    Whip the egg whites with a pinch of finely chopped parsley to get stiff and shiny peaks.

  • Place the whipped egg whites into a pastry bag (I chose a star nozzle) and close the nest of boiled greens by also covering a bit of the cooked greens ring.

    Gently slide the yolk in the center and add a pinch of salt and grated cheese.

  • Bake in a preheated oven at 392°F for 4/5 minutes, also adding a little extra virgin olive oil, and finish the recipe with the grill mode for the last few minutes, so that the yolk is not overcooked but fluid and creamy.

    Serve immediately and enjoy your meal with the creamy eggs in the nest!
