CREAMY PACCHERI with salmon and cherry tomatoes

Creamy paccheri with salmon and cherry tomatoes a tasty first course, quick enough for a delicious and easy dish!

The paccheri are an intriguing pasta shape, originating from Campania, that can also be stuffed rather than just accompanied by flavorful ragùs and rich, appetizing sauces.

In this dish, I preferred to make the pasta dressing with fresh salmon a “fatty” fish but with noteworthy and appreciated nutritional characteristics.

Ingredients for CREAMY PACCHERI WITH SALMON AND CHERRY TOMATOES

  • 11.3 oz paccheri
  • 3 slices fresh salmon
  • 15 cherry tomatoes
  • 4 tbsps cream cheese
  • as needed fresh parsley (chopped)
  • 1 shallot
  • as needed extra virgin olive oil
  • as needed salt and pepper

FOR THE PREPARATION OF CREAMY PACCHERI WITH SALMON AND CHERRY TOMATOES

  • Finely chop the peeled shallot.

    In a pan, add a drizzle of extra virgin olive oil and sauté the shallot until golden.

  • Dice the fresh salmon and add it to the sauté.

    Cook over medium heat for 3/4 minutes then add the washed cherry tomatoes cut into wedges.

  • Continue cooking and in the meantime prepare the pasta.

  • In a large pot, add cold water and salt and boil the paccheri.

    Salting pasta (before or after boiling? big question huh) is obviously important, and it’s recommended to add 10 grams of salt per approximately 1 liter of water, but other factors such as the type of pasta, our habits, and personal needs, and not to be underestimated, how savory the sauce will be!!

  • Drain the paccheri, reserving a ladle of cooking water.

    Pour the al dente short pasta into the sauce, adding the cream cheese and adjusting the salt.

  • Sprinkle with chopped parsley and plate for your guests.

Instead of cream cheese, you can add robiola or fresh mascarpone…

If you want to give a stronger flavor, finely chop a couple of sun-dried tomatoes in oil and add them to the sauce…
