Creative Salad: Complete Meal

Hot hot …the keyword for the summer period when in Bologna temperatures are always high and humidity through the roof!
Today I made a creative salad complete meal which I dressed with the classic vinaigrette, but if you want to make the dressing even more appetizing, you can vary it by using light mayonnaise or an even lighter yogurt sauce!

Creative Salad: Complete Meal

Ingredients

  • 1 package mixed salad
  • 4 hard-boiled eggs
  • 2 potatoes
  • 7 oz cooked ham
  • 2 tomatoes
  • 4 pickled gherkins
  • to taste chives
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste white wine vinegar

Preparation of the Creative Salad Complete Meal Recipe

  • For this rich creative salad, first I boil the potatoes for about 20 minutes and then cut them into chunks once they have cooled.

    Then I wash all the vegetables…

    the mixed salad (curly endive, corn salad, radicchio, etc.) and the tomatoes, for this recipe I chose the plum tomato variety.

  • I continue with this easy summer complete meal and dice the cooked ham (today I bought a shoulder piece) and slice the already hard-boiled eggs.

  • I slice the pickled gherkins into rings and begin to assemble the creative salad complete meal.

  • In a bowl, I put the mixed salad, boiled potatoes, plum tomatoes, pickled gherkins, diced cooked ham, and slices of hard-boiled eggs.

  • In a small bowl, I place the EVO oil, white wine vinegar, chopped chives, and season with salt and pepper.

    With a fork, I emulsify everything well, mixing the various ingredients which I then pour over the rich and colorful salad.

  • I mix all the ingredients well with the dressing and serve it on the table!

    Colorful, simple, and appetizing, the creative salad is an easy complete meal for these very hot and sunny summer days!
