These crispy filo pastry bites with feta and jam are a tasty snack, with a balanced flavor and perfect for holiday appetizers. They are prepared in just a few minutes, are quick and very easy, but always make a great impression thanks to the contrast between the crispiness of the filo pastry and the creaminess of the FETA. The orange jam adds a fresh and slightly sweet note that wonderfully completes every bite, and for me, it is delicious paired with the Greek cheese.

Ingredients
- 4 sheets filo pastry
- 1 block feta
- to taste extra virgin olive oil
- to taste jam (orange, fig)
- to taste thyme
- to taste pepper
- to taste acacia honey

Steps
Preheat the oven to 355/375°F static mode.
On a large cutting board, perfectly overlap the filo pastry sheets and brush the entire surface with olive oil. (I used 4 sheets, but 3 are also fine if you don’t want a thick layer.)
Spread the chosen jam (for me orange) making a strip 1 1/2 inches from the edge.Cut the feta crosswise into 4 equal pieces.
Place each piece lengthwise on the jam.
Add thyme and pepper.
Cover the feta with the lower edge and carefully start rolling the filo pastry over the feta and oranges, trying to contain everything.
Brush with olive oil as you proceed and then cut the filled filo strip into cubes.
Then place the filo pastry bites on the baking sheet lined with parchment paper.
Bake in the preheated oven for about 15/16 minutes or until the filo cubes are golden.
Remove the finger food from the oven, add a drizzle of honey and a pinch of thyme, and serve immediately.
These appetizers are simple and delicious!
