PREPARATION FOR CRISPY HARD-BOILED EGGS
For the crispy hard-boiled eggs, I need to chop the SANDWICH BREAD, the speck, and I put everything in the mixer, turning the blades to make it chopped but not powder.
I also add some parsley, but basil or chives are also fine, and set aside.
I boil the eggs starting in cold water and calculating about 4/5 minutes from the moment of boiling.
I let them cool under a stream of cold water and then peel them gently.
In a tall saucepan about 8 inches in diameter, I pour plenty of vegetable oil.
Peanut oil is the one that reaches the highest smoke point and is recommended for proper frying.
Meanwhile, as the vegetable oil reaches the right temperature (about 340°F/356°F), I pass the HARD-BOILED EGGS first in flour, then in beaten egg, and then in the coarse BREADING of sandwich bread, speck, and parsley.
I press well to ensure it doesn’t disperse during cooking and continue preparing all the indicated eggs.
I insert a wooden skewer into the hot oil, and if small bubbles form around it, the temperature is right. I immerse the breaded eggs, browning them on all sides until they are golden and very crispy.
The crispy hard-boiled eggs should then be placed on kitchen absorbent paper to remove excess oil, and I serve them hot with a small mixed salad of greens.
Tasty, crispy, and flavorful, the crispy hard-boiled eggs are appetizing and very simple to make!
