Perfect for two people — or one who’s had a long day and decided that company isn’t needed and it’s delightful to prepare tasty food and set the table just for oneself (THAT IS ME).
And let’s not overlook the fact that they are made with the magic of the air fryer. No pans, no splattering oil, no regrets for the waistline!
You can prepare them in 10 minutes, they cook themselves while you pour yourself a glass of wine, and they also make a great impression if you have someone over for dinner who eats vegetarian “but only if it’s good”.
It was a last-minute idea so I made do with what I had without considering other guests at the table!
I recommend serving them with BBQ sauce if you want to make them less delicate, but I swear they are amazing!

- q.b. extra virgin olive oil

In a bowl, combine the mashed potatoes, lentils, egg, salt, pepper, and turmeric.
Mix the mixture well.Shape the mixture into patties with slightly dampened hands.
Roll them in coarsely ground bread crumbs.
Place them in the air fryer basket.
Spray with extra virgin olive oil and cook at 374°F for about 10 minutes, turning them halfway through for a more even browning.
Storage and Tips
How to store and freeze lentil and potato croquettes
✅ In the fridge:
Once cooked, they keep for up to 2 days in an airtight container.
I recommend reheating them in the oven or air fryer to bring back the crust.
✅ In the freezer – raw (recommended):
Shape them, bread them, and place them well apart on a tray.
Place in the freezer for 1-2 hours (quick freeze), then transfer them to a freezer bag.
They keep for up to 3 months.
Cook them directly from frozen: in the oven at 392°F for 30-35 min, or in the air fryer at 374°F for 20-25 min (depending on size).
✅ In the freezer – cooked:
You can also freeze them once cooked and cooled, but the crust will lose quite a bit!
To reheat: hot oven or air fryer for 10-15 minutes.
