INGREDIENTS RECIPE Crispy Oven Baked Potatoes

  • 2.2 lbs potatoes
  • 2 cloves garlic
  • to taste rosemary
  • to taste extra virgin olive oil
  • to taste salt

FOR PREPARING THE RECIPE Crispy Oven Baked Potatoes

  • Wash the potatoes keeping the skin on if you like; today I peeled them!

    Cut the potatoes into slices and put them in a bowl with water, leaving them for at least 1 hour so they can lose the starch and become super crispy.

  • Change the water at least once; ideally, change it until it’s clear and the potatoes have lost all the starch!

  • Line a baking tray with parchment paper and put it empty in the oven, turning it on at 356°F in static mode.

    Then place the potato slices perfectly dried, trying not to overlap them.

  • Add the garlic cloves (I use them unpeeled) and plenty of fresh rosemary.

  • Pour a little extra virgin olive oil and a little salt.

  • Mix them well to season and flavor them perfectly.

  • Bake for about 30 minutes at 356°F and then increase the temperature to 392°F for an additional 10 minutes to have them crispy outside and deliciously tender inside.

    Remember to stir them during cooking so they brown evenly…

  • When done, serve the crispy oven baked potatoes, removing the garlic and adjusting salt if needed…

    My mom, for example, doesn’t season them during cooking but prepares a plentiful mince of garlic and rosemary, adds a few tablespoons of coarse salt, and seasons the potatoes just a second before serving them at the table...
