- 2.2 lbs potatoes
- 2 cloves garlic
- to taste rosemary
- to taste extra virgin olive oil
- to taste salt

Change the water at least once; ideally, change it until it’s clear and the potatoes have lost all the starch!
Line a baking tray with parchment paper and put it empty in the oven, turning it on at 356°F in static mode.
Then place the potato slices perfectly dried, trying not to overlap them.
Add the garlic cloves (I use them unpeeled) and plenty of fresh rosemary.
Pour a little extra virgin olive oil and a little salt.
Mix them well to season and flavor them perfectly.
Bake for about 30 minutes at 356°F and then increase the temperature to 392°F for an additional 10 minutes to have them crispy outside and deliciously tender inside.
Remember to stir them during cooking so they brown evenly…
When done, serve the crispy oven baked potatoes, removing the garlic and adjusting salt if needed…
