While browsing the web, I found these Croatian Easter dolls or primorski uskrsnje bebe, which is a special Croatian bread shaped like a baby typical of the Easter period. It is a brioche-type bread typical of the coastal areas of Croatia, such as Istria and Primorje, that wraps around a colored hard-boiled egg, giving the impression of resembling a little baby!
My babies are chubby, but I decided to publish them on the blog anyway because it’s a cute idea even as a gift for upcoming Easter holidays and an idea for doing some activities with the kids at home.
I made half the amount of these that I indicated below because we are only two people in the family, and I absolutely don’t want to waste food, and I didn’t know who to gift these sweet leavened dolls with an egg head and braided body.
FOR COLORING THE EGGS.…to be fair, although I used a ton of dye, they just turned pink, and I wanted them redder! Anyway, I put water in a saucepan with fine salt and red liquid dye, and when it boils, I gently put the eggs in, letting them simmer for 15 minutes. I let them cool while keeping the eggs in the water and then use them cold to make the faces of the Croatian leavened Easter dolls
BETTER TO COLOR THEM WITH NATURAL COLORS THEREFORE
beetroot/spinach/saffron/coffee for example!!!

Ingredients
- 4 cups all-purpose flour (personally I added a third of Manitoba flour)
- 2 eggs (small)
- 1 1/4 cups milk (warm)
- 1 tsp salt (fine)
- 1 packet dry yeast (which is 7 grams)
- 1/4 cup wildflower honey
- 2 tbsps corn oil (or other vegetable oil)
- to taste lemon (only zest)
- 1 egg
- to taste sugar sprinkles

FOR THE PREPARATION OF THE CROATIAN EASTER DOLLS RECIPE
So let’s start…I mix the flour (only 0/only all-purpose or with a part MAYBE 1/3 of Manitoba) in the bowl of the stand mixer (or another bowl if you work by hand).
In a bowl, I pre-mix the milk with the honey, corn oil, eggs, and grated zest of organic lemon and pour the mixture at low speed into the stand mixer.
I mix the ingredients at low speed, then add the fine salt.
I continue working with the dough hook for 15/20 minutes until the dough detaches from the sides and forms a well-amalgamated ball that I cover and let rise, covered and away from sources of heat, for an hour and a half or two: it must double in volume!
When the dough has doubled, I divide the dough into 12/13 equal parts (clearly it depends on what dolls or large buns you will make), and I start making the Croatian Easter dolls and publish a drawing made by my son on the phone that maybe helps to understand how to make it …
In each little loaf obtained from the total dough division, I take a piece that will be the long one wrapping the colored egg (above I explained how to color the eggs), and it will let two of the braid ends fall.
In the middle, there will be a shorter stick that will be the 3rd strand, and so I can make the braid like the body of the soft sweet Croatian Easter doll.
I continue until the dough is used up and arrange the sweet leavened dolls on the oven tray protected by parchment paper.
I cover with cling film and let rise for about 30 minutes. After the second rest, I beat the egg and then brush it on the Croatian Easter dolls, then sprinkling them with sugar sprinkles.
Now I just have to bake at a preheated oven at 356°F and let them cook and brown evenly for 20 minutes or a little more, but obviously check according to the characteristics of your own oven.
Once cool, with the food marker, I draw the features and … we are ready for the delightful tasting of these Croatian Easter leavened sweets.
