It’s already the second time I’ve made the crunchy coffee shortbread cookies because the first time, between one thing and another, I ate them all before taking the photo which is crucial for publishing the recipe, so…

I had to sacrifice myself and redo this fantastic shortbread with coffee and I must say that I nibbled quite a few even this time… The crunchy coffee shortbread cookies are very, very good, they’re a joy to crunch on and almost irresistible…

CRUNCHY COFFEE SHORTBREAD COOKIES

Ingredients for CRUNCHY COFFEE SHORTBREAD COOKIES

  • 2 cups Flour
  • 10.5 tbsp Butter
  • 0.6 cup Sugar
  • 3 teaspoons Instant Coffee
  • 1 tablespoon Espresso Coffee

  • Electric whisk
  • Bowl
  • Baking Sheet
  • Plastic Wrap

Preparation

  • Let the butter soften at room temperature, then combine it with the electric whisk to the sugar, whipping the mixture into a cream.
    Dissolve the instant coffee in the espresso and add it to the mixture, always blending everything together using the whisk or a stand mixer.

  • Add the flour little by little until you have a smooth mixture.

  • Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 2/3 hours (I did it overnight).

  • After the time has passed, make small oval balls with a little dough and place them on the baking sheet lined with parchment paper.

  • Put the tray in the fridge for 10 minutes.

  • After the time has passed, cut them in the center with a knife and then bake in a preheated oven at 340°F.

  • Bake for about 15/20 minutes then let the crunchy coffee shortbread cookies cool. Take them out and… serve them at the table, perfect for an after-dinner treat or a sweet break during the day!

    P.S. My cookies may have opened up a bit too much, but… the taste is immense nonetheless…
