These crunchy phyllo bites with feta and jam are a tasty snack with a well-balanced flavor, perfect for holiday appetizers. They can be made in minutes, are quick and easy, but always make a splash thanks to the contrast between the crunchiness of phyllo pastry and the creaminess of feta. The orange jam adds a fresh and slightly sweet note that completes every bite wonderfully, and to me, it’s delicious paired with Greek cheese.

Ingredients

  • 4 sheets phyllo pastry
  • 1 block feta
  • to taste extra virgin olive oil
  • to taste jam (orange, fig)
  • to taste thyme
  • to taste pepper
  • to taste acacia honey

Steps

  • Preheat the oven to 356/374 °F in static mode.
    On a large cutting board, lay out the phyllo pastry sheets perfectly stacked and brush the entire surface with olive oil. (I used 4 sheets, but 3 also work if you don’t want a thick layer.)
    Spread the chosen jam (orange for me) in a strip 1.18/1.57 inches from the edge.

    Cut the feta crosswise into 4 equal pieces.
    Place each piece lengthwise on the jam.
    Add thyme and pepper.

  • Cover the feta with the bottom edge and start rolling up the phyllo pastry over the Greek feta and oranges, trying to enclose everything.

  • Brush with olive oil as you go, then cut the filled phyllo strip into cubes.

    Arrange the phyllo bites on a baking sheet lined with parchment paper.

    Bake in the preheated oven for about 15/16 minutes or until the phyllo cubes are golden brown.

    Remove the finger food from the oven, add a drizzle of honey and a pinch of thyme, and serve immediately.
