A fridge-clearer recipe for me today because I had a bunch of asparagus and a package of smoked salmon bought a week ago, so I decided to make this kind of crustless savory pie, a kind of super frittata that’s very tasty and great even cold!
The crustless quiche with asparagus and smoked salmon is perfect for a dinner, just add a nice green or mixed salad and the meal is ready!!!!!!!!!!

- 4 eggs (medium)
- 1 bunch asparagus
- 4 tablespoons all-purpose flour
- 8.8 oz smoked salmon
- to taste parsley
- to taste gruyere (grated)

Clean the asparagus, cut them into large pieces, and blanch them for a few minutes in salted boiling water.
Drain them and go on to the quiche… without crust!
In a bowl, place the eggs and flour, beating with a hand whisk.
Slice the smoked salmon into strips and add them to the “frittata”.
Also add the cooked asparagus and adjust with salt and pepper.
Line a baking dish with wet and squeezed parchment paper of 9 inches, then pour in the mixture and add a generous grating of gruyere and some parsley leaves.
Bake in a preheated oven at 392°F for about 25/30 minutes or depending on your oven’s characteristics.
Once cooked, let it cool slightly, then serve at the table….
