CRUSTLESS QUICHE with Salmon and Asparagus

A fridge-clearer recipe for me today because I had a bunch of asparagus and a package of smoked salmon bought a week ago, so I decided to make this kind of crustless savory pie, a kind of super frittata that’s very tasty and great even cold!
The crustless quiche with asparagus and smoked salmon is perfect for a dinner, just add a nice green or mixed salad and the meal is ready!!!!!!!!!!

  • 4 eggs (medium)
  • 1 bunch asparagus
  • 4 tablespoons all-purpose flour
  • 8.8 oz smoked salmon
  • to taste parsley
  • to taste gruyere (grated)
  • to taste salt and pepper

FOR THE PREPARATION OF THE CRUSTLESS QUICHE WITH SALMON AND ASPARAGUS RECIPE

  • Clean the asparagus, cut them into large pieces, and blanch them for a few minutes in salted boiling water.

    Drain them and go on to the quiche… without crust!

  • In a bowl, place the eggs and flour, beating with a hand whisk.

    Slice the smoked salmon into strips and add them to the “frittata”.

    Also add the cooked asparagus and adjust with salt and pepper.

  • Line a baking dish with wet and squeezed parchment paper of 9 inches, then pour in the mixture and add a generous grating of gruyere and some parsley leaves.

    Bake in a preheated oven at 392°F for about 25/30 minutes or depending on your oven’s characteristics.

    Once cooked, let it cool slightly, then serve at the table….
