Cucumber and Robiola Cheese Tea Sandwiches

Ingredients

  • 4 slices sandwich bread
  • 1 cucumber
  • 5.3 oz robiola cheese
  • 1/2 lemon (juice only)
  • to taste chives
  • to taste salt
  • to taste pepper

Steps

  • I start this quick and easy recipe by peeling the cucumber, then finely slicing it with a peeler or mandoline and placing it in a bowl with a pinch of salt and a few drops of lemon juice.

    I then let it rest for 5/10 minutes.

    Spread the robiola cheese cream on the slices of bread. Slightly squeeze the cucumbers and place them on top.
    Close with another slice of bread, press gently, and cut into triangles or rectangles.

  • Meanwhile, in a bowl, I soften the robiola cheese with a spoon, adding a drizzle of oil, salt, pepper, and some pieces of chives that are divine!

  • I cut the whole slice of bread into 3 squares and then into triangles and pack everything with plastic wrap to keep these simple cucumber tea sandwiches soft and fluffy.

    Super easy and definitely light!
