INGREDIENTS

  • 3.9 oz cookies (leftover non-chocolate shortbread)
  • 14.1 oz raspberries (frozen or mixed berries)
  • 2 tbsps maple syrup (or honey)
  • 1 cup liquid cream (for whipping or soy cream for whipping)
  • 3 tbsps cornstarch (or potato starch)
  • 1 1/4 cup milk
  • 2 tbsps sugar (also brown sugar)
  • 1 tsp vanilla extract

TO PREPARE THE RECIPE FOR THE CUP WITH VANILLA CREAM AND RASPBERRIES

  • First, I chop the cookies in a mixer (without pulverizing them) to get a kind of streusel which I temporarily set aside.

    In a saucepan, I put the frozen mixed berries or raspberries with maple syrup or honey at low temperature, and then I let them soften, keeping it on the flame and stirring for about 15 minutes.

    I pass this creamy mixture through a sieve, keeping the resulting sauce in a bowl until final use.

    Now I prepare the delicious vanilla cream by pouring the liquid cream into a cold saucepan and adding and dissolving the cornstarch powder.

    I put it on a low flame and also add the sugar, milk, and vanilla.

    I continue to stir and let the creamy sauce thicken, which I then cool by stirring or covering with cling film to prevent a thicker surface layer from forming.

    At the bottom of the cup, I put the chopped cookies mix, then the red fruit coulis, and then the vanilla sauce, and repeat this layer a second time.

    It’s clear that there is no mandatory sequence; make the layers as you like, and the result will still be delicious!

    I finished with the raspberry sauce and a little cookie from Ikea with my initial just to celebrate myself, haha!
