INGREDIENTS

  • 3.9 oz cookies (leftover shortbread not chocolate)
  • 14 oz raspberries (frozen or mixed berries)
  • 2 tbsp maple syrup (or honey)
  • 1 cup liquid cream (to whip or soy whipping cream)
  • 0.9 oz cornstarch (or potato starch)
  • 1 1/4 cups milk
  • 0.9 oz sugar (also brown sugar)
  • 1 tsp vanilla extract

FOR THE PREPARATION OF THE VANILLA CREAM AND RASPBERRY CUP RECIPE

  • First, I chop the cookies in the mixer (without pulverizing them) to get a kind of streusel which I set aside temporarily.

    In a saucepan, I put the mixed berries or frozen raspberries with the maple syrup or honey at a low temperature, then let them soften and keep on the flame, stirring for about 15 minutes.

    I pass this creamy sauce through a sieve, holding the resulting sauce in a bowl until final use.

    Now I prepare the delicious vanilla cream by pouring the liquid cream into a saucepan cold, adding and dissolving the cornstarch powder.

    I put it on low heat and also add the sugar, milk, and vanilla.

    I continue to stir and let the creamy sauce thicken, which I will then cool by stirring or covering with film wrap, so it doesn’t form a thicker surface layer.

    Here are the various elements ready, and we can compose our vanilla cream cup with raspberries

    At the bottom of the cup, I put the mix of chopped cookies then the red fruit coulis then the vanilla sauce and repeat this layer a second time.

    Of course, there is no mandatory sequence, make the layers as you like, the result will be always delicious!

    I finished with the raspberry sauce and a cookie from Ikea with my initial just to celebrate myself haha!
