- 1.1 lbs spaghetti
- 2 zucchini
- 20 squash blossoms
- 1 packet saffron (diluted in a tablespoon of hot water)
- 2 egg yolks
- to taste grated Parmesan
- 1 shallot
- to taste salt
- to taste pepper
- to taste chopped parsley

FOR THE PREPARATION OF DELICATE SPAGHETTI WITH SQUASH BLOSSOMS
I start by washing and cutting the zucchini into wedges, peeling and slicing the shallot.
In a pan, I put 2/3 tablespoons of extra virgin olive oil and add chopped shallot and zucchini with 16 blossoms, cooking for 4/5 minutes.
I season with salt and pepper and add saffron that has been dissolved in a splash of boiling water.
Continue cooking until the vegetables are tender but firm and if the sauce gets too dry, I add a little water (or broth).
In a high-edged saucepan I put salted water to cook the spaghetti, which I then drain al dente and place directly into the pan or wok.
I mix the pasta with the sauce, adding the egg yolks diluted with a couple of tablespoons of water (or broth) until they are cooked.
I add the remaining zucchini blossoms cut into strips and some chopped parsley, adjusting salt and pepper, then toss the spaghetti dish with squash blossoms with grated cheese, which always goes perfectly!
