Delicious Bull’s Eyes Cookies

Bull’s Eyes cookies that are extremely simple and delicious but as always, simplicity is what fascinates and envelops your taste buds!!

They disappeared in a second because they’re crumbly cookies, sweet just right, you can personalize them with the jam flavor you like best or have in your pantry (I used classic peach and Nutella) and everyone really enjoys them!

There are about 28/30 depending on the size, clearly… I recommend these shortbreads are “perhaps” (meaning they are too good and get nibbled quickly) for about 5/6 days if well-preserved under a glass dome… but I suggest eating them right away and making them again soon!

Ingredients BULL’S EYES RECIPE

  • 2 1/2 cups All-purpose flour
  • 5.3 oz cold butter
  • 2 Eggs
  • 2/3 cup Sugar
  • 1 packet vanillin
  • 1 packet Baking powder for sweets
  • to taste jam
  • to taste Nutella®
  • to taste Powdered sugar

Preparation BULL’S EYES RECIPE

  • In a large bowl, sift together the flour and baking powder.
    Add sugar, vanillin, butter cut into pieces, and eggs.
    Mix well and shape the mixture into a dough disk, wrap it in plastic wrap, and place in the refrigerator for about 30 minutes.

  • After the indicated time, roll out the shortcrust pastry on a work surface, using some flour and parchment paper to facilitate rolling with a rolling pin.

  • Use a cutter or glasses to cut out the base circles for the Bull’s Eyes.

    Half of these shortcrust circles will then be holed in the center (even using a plastic bottle cap) and will form the top part of the cookie shortbread to be filled.

  • Place both the whole circles and the shortcrust donuts on the parchment paper protecting the baking tray, and bake the Bull’s Eyes in a preheated oven at 356°F for about 8/9 minutes until the cookie parts are lightly golden.

  • Let them cool completely on a cooling rack, then proceed to fill them with your preferred jam and/or Nutella.

    Before placing the top part (the shortcrust donut), dust it with powdered sugar and assemble the Bull’s Eyes cookies.

  • These crispy, crumbly, and delicious cookies are perfect for a snack or breakfast, and if well-wrapped in food bags, you can gift them for upcoming family festivities! Enjoy with the recipe of the Bull’s Eyes!
