A new cake, actually a delicious cake with ricotta and jam, an easy and very good preparation, soft and with some wild berry jam, at least that’s the filling I used.
The idea of combining the delicacy of ricotta which makes the cake batter so pleasant and the creaminess of the jam I think is excellent and this breakfast cake, but also for a snack, proves it!
Before baking the cake with ricotta and jam, I thought of sprinkling the raw batter with some almond flakes that add a pleasant crunchy note, so… off to the kitchen for the easy cake with ricotta and jam!!!

DELICIOUS CAKE WITH RICOTTA AND JAM

Ingredients for DELICIOUS CAKE with ricotta and jam
- 3 Eggs
- 250 g ricotta
- 50 ml vegetable oil
- 2 1/8 cups Flour
- 3/4 cup Sugar
- 1 packet baking powder
- to taste Lemon zest (grated)
- 6 tablespoons jam (I used wild berries)
- 3 tablespoons sliced almonds

Preparation of DELICIOUS CAKE with ricotta and jam
Beat the eggs with the sugar for a long time with electric beaters.
Then add the previously softened ricotta.Now pour the oil into the mixture and blend everything with the electric beaters. Sift the flour with the baking powder and add them gradually.
Grate the zest of an untreated lemon and add it to the mixture. You should obtain a smooth and homogeneous mixture.
Butter and flour a 9.5-inch diameter cake mold. Pour part of the batter, then add the jam you chose.
Finish the delicious cake with ricotta and jam with the remaining batter. Bake the filled cake in a preheated oven at about 340°F for about 40/45 minutes, or depending on your appliance’s characteristics.
Once baked, as always, do the toothpick test, remove from the oven, and let the cake with ricotta and jam cool. Enjoy this soft and delicious dessert!
