Delicious puff pastry dove filled with cheeses

I saw the recipe for the appetizer — a puff pastry dove filled with a cheese cream and a few pink peppercorns — in the cooking magazine Cucinare Bene and immediately decided to replicate it in my kitchen because it seemed like a cute idea and, all in all, not too difficult!

I fiddled around to find a simple image that I made with a fluted pastry wheel and baked quickly in the oven.

You can also make the puff pastry dove for Easter in a sweet version by filling it with pastry cream, diplomat cream, creams with added chocolate chips and many more!

HOW TO VARY THE FILLING OF THE SAVORY PUFF PASTRY DOVE?

For this Easter appetizer we can get creative in many ways, for example:

• use robiola mixed with mascarpone or a spreadable cream cheese;

• add a creamy cheese to which you have, for example, added chopped basil, smoked salmon, grated Parmigiano-Reggiano, bits of sun-dried tomato and much more!

Ingredients

  • 2 packages puff pastry
  • 2 tbsp pink peppercorns
  • 2 2/3 cups spreadable cheese (cream cheese) (about 21 oz)
  • 2/3 cup mascarpone (I used mascarpone mixed with gorgonzola)
  • to taste green olives (pitted or not, as you prefer)
  • 2 pinches salt
  • 1 pinch pepper

FOR THE PREPARATION OF THE PUFF PASTRY DOVE RECIPE

  • Roll out the puff pastry and after about ten minutes, when the dough has relaxed, trace two dove-shaped outlines, leaving them on the parchment paper supplied with the package.

  • Honestly I didn’t want to brush it with egg yolk and after poking it here and there so it wouldn’t rise too much (but as you can see it’s a bit lopsided and I didn’t manage it) I baked the two doves with a few hidden bunnies, hehe!

    They baked for about 15–20 minutes in a preheated oven at 374°F, but be sure to check the doneness with your own home oven!

  • Meanwhile, put the cheeses in a bowl and with electric beaters blend everything into a creamy mixture, seasoning it with salt and pepper.

  • Let the two puff pastry dove pieces cool, then put the cheese mixture into a piping bag fitted with a small star tip and cover the entire first dove, adding a few pink peppercorns.

    Slice some green olives into rounds and tuck them randomly into the cheese cream.

  • Cover with the second dove and spread the remaining cheese cream in a very thin layer on top, adding a few more pink peppercorns.

    Try to make the eyes and beak of the dove: mine turned out more like a pigeon than a dove…

  • Et voilà — the puff pastry dove filled with cheese cream is ready and you can serve and taste it with your guests!

As always, puff pastry, if filled with creams, absorbs moisture and becomes soggy…

Therefore it would be preferable to cut out the two templates even the day before the meal and proceed to assemble the savory puff pastry dove only just before serving it at the table!
