- 1.5 lbs potatoes
- 4.5 tbsp butter (soft)
- 3 egg yolks
- 0.5 cups Grana Padano cheese, grated
- to taste salt
- to taste pepper
- to taste nutmeg

FOR THE PREPARATION OF THE DUCHESS POTATOES RECIPE
Boil the potatoes starting from cold water for about 25 minutes.
Pass them through a potato ricer and place the mixture in a bowl.
Add the soft butter and the grated cheese, mixing the creamy mixture well.
Add the egg yolks and adjust the salt and pepper, adding a pinch of nutmeg which I think is divine!
Now preheat the oven to 350°F (180-190°C) and line a baking tray with parchment paper.
Put the mixture into the piping bag with a star tip and pipe small stars onto the paper, spacing them out a little, until the mixture is used up.
Bake until golden for about 20-25 minutes or depending on the characteristics of our home oven.
