DUCHESS’ STRACCHINO creamy and delicious spoon dessert

Here is a spoon dessert that is very good creamy delicious and perfect for the summer season. You will find many versions of desserts with mascarpone and chocolate called Duchess’ Stracchino online, I personally revised the GialloZafferano version by removing the added liqueur in the soaking of the ladyfingers and altering the amounts of other ingredients.

The plumcake mold is about 12×4 inches but you will see that the dessert will be finished quickly given its goodness, but if there’s any left, it can be stored in the freezer! Enough chatting, let’s start messing around in the kitchen ^_^

Ingredients DUCHESS’ STRACCHINO RECIPE

  • 9 oz Mascarpone
  • 9 oz ladyfingers
  • 2 oz Dark chocolate (in pieces)
  • 3 tbsps Unsweetened cocoa powder
  • 1 oz almonds (chopped)
  • 4 tbsps granulated sugar
  • 8 coffee
  • 2 Eggs
  • 1 tbsp Vanilla extract (or vanillin)

DUCHESS’ STRACCHINO RECIPE Preparation

  • Whisk the egg yolks with 2 tablespoons of sugar, adding the vanilla in whichever form you prefer.

  • Then add the mascarpone by gently mixing to obtain a smooth and lump-free cream.

  • Start to whip the egg whites then add the remaining 2 tablespoons of sugar for a firm and glossy “meringue” and fold them into the mascarpone sweet cream.

  • Now divide the obtained mixture into two parts: to one part add the chopped almonds and the unsweetened cocoa, and to the other add the dark chocolate pieces.

  • Prepare the coffee and “dip” the ladyfingers in it, lining a large plumcake mold previously lined with parchment paper.

  • Now pour the prepared sweet creams starting with the dark one (heavier) then the light one and proceed to cover the dessert with more ladyfingers soaked in coffee.

  • Now place the duchess’ elegant and delicious stracchino in the freezer for at least 3 hours before serving.

  • At serving time sprinkle it with unsweetened cocoa and almond flakes…
