Scorching heat in Bologna is really crazy, we are frantically searching for a bit of relief every minute of the day…
Sure, it’s summer, it’s the first day of August but damn these temperatures are killing us!!!!!
The idea of entering the kitchen of my apartment didn’t really thrill me, I confess, but then I opted for a quick and easy rainbow salad and the minimal time needed to make it finally convinced me!!!
It’s a complete dish with cheese (goat), cured ham (or bresaola), nuts (pine nuts), fresh fruit, and vegetables (iceberg lettuce and cherry tomatoes) and today I finally found some fragrant and juicy tomatoes that seemed just picked from the field!
These cherry tomatoes from Semano’s company in Pachino are amazing, and I think it’s right to mention this company for this very fresh and definitely tasty product!
I dressed this colorful rainbow and very quick salad with a vinaigrette with Evo oil and balsamic vinegar from Modena which is really fantastic on many homemade dishes.

Ingredients
- 3 1/2 cups lettuce (for me iceberg heart already ready)
- 3 1/2 tbsp pine nuts
- 1 1/2 oz cured ham
- 1 3/4 oz petit chevre (or another mild goat cheese)
- 3 1/2 oz Pachino cherry tomatoes (Semano srl company from Pachino)
- 2 3/4 oz blueberries
- to taste extra virgin olive oil
- to taste balsamic vinegar of Modena
- to taste salt
- to taste pepper (optional)
Preparation
For the easy and quick rainbow salad wash and pat dry the cherry tomatoes, the iceberg lettuce, and the fresh blueberries.
Slice the goat cheese and roll the slices of cured ham.

Compose the dish making it chromatically appealing with the vegetables, pine nuts, chevre cheese, blueberries, and cured ham.
Dress the easy and quick rainbow salad only when serving at the table with an emulsion of extra virgin olive oil, balsamic vinegar of Modena, adjusting with salt and a pinch of pepper, maybe white!
Simple, appetizing, and colorful, the rainbow salad is a rich and complete single dish perfect for the hot and humid summer!
