I love the fruit that is arriving on the store shelves and at the supermarket: APRICOTS, peaches, cherries, MELON, WATERMELON are all delicious and I’m already savoring their goodness also because all this brings to the sun, summer, beach holidays, and finally to total and absolute rest… At least for a while, hehe! This year I am really very, very tired and I absolutely need to take a break or else…
Among all the fruit that is arriving, today I have prepared a easy cherry and chocolate cake soft and delicious!

Ingredients for EASY CHERRY AND CHOCOLATE CAKE
- 3 Eggs
- 1/2 cup Sugar
- 1 cup Flour
- 1/2 cup vegetable oil (corn)
- 25 cherries (in pieces)
- 1/2 cup yogurt (plain or vanilla)
- 1/4 cup chocolate chips
- 4 tablespoons Potato starch
- 1 packet baking powder
- 4 tablespoons Powdered sugar (optional)
- 2 tablespoons hot water (optional)

Preparation for Easy Cherry and Chocolate Cake
Beat the eggs with sugar for a long time to have a light and frothy batter. Add the vegetable oil.
Add the cherries in pieces and the yogurt of chosen flavor and mix with a flexible spatula without deflating the mixture.
Pour the chocolate chips and mix everything together.
Sift the flour with the potato starch and baking powder combining the powders and mixing the batter well. Butter and flour the pan.
Pour the mixture and bake in a preheated oven at 320°F for about 45 minutes or depending on the characteristics of your oven.
The easy cherry and chocolate cake became too colored on the surface and I covered it with foil to finish the baking.
Once cooked and cooled, remove from the pan and if you want, prepare a water glaze by mixing powdered sugar with hot water: just stir with a spoon and pour the glaze on the edges of the cake.
Just to be generous, I also sprinkled everything with powdered sugar… Enjoy with the easy cherry and chocolate cake!

The cherry is mainly a source of vitamin C, A, and potassium, but also contains fibers and other minerals and vitamins. It is said to have antioxidant, sedative effects and helps both intestinal functions and diuresis.
Caloric intake is quite low, about 67 calories per 100 grams of product, making it suitable for people following a low-calorie diet. A particular feature is that the cherry is also rich in melatonin, which regulates the sleep-wake cycle and is a powerful antioxidant, supposedly offering significant benefits for cancer prevention and fight.
Even the cherry stems have diuretic and anti-uric properties and are recommended for specific doses in teas.
