First of all, I must say that I was really foolish … I took all the photos of the folding procedure etc etc and… when I made a new recipe on the same day I FORGOT AND DAMN ME… I DELETED THEM ALL!!!!!! Yes, I had forgotten them all but today I made the bread again and voilà here’s the new picture of the easy no-knead bread freshly baked…
Anyway, the easy no-knead bread is delicious and since I will make it again, I will post it next time (today April 1, 2020) maybe making a smaller loaf because here at home we love bread and we devour it in a second!!
And since we are stuck at home because of this coronavirus that our grandchildren will read about in school books, I wouldn’t want to have to change my whole wardrobe when crossing my fingers we can go out again eh eh!
I found it here (but it seems the TRUE inventor is him → Jim Lahey) and it is a very simple easy no-knead bread and the fact that it rises all night in the refrigerator simplifies the preparation a lot.

- 3 1/4 cups all-purpose flour
- 1/2 tsp instant yeast (Mastro Fornaio for me)
- 1 1/4 cups water
- 1 1/2 tsp sugar
- 1 tsp salt

FOR THE PREPARATION OF THE EASY NO-KNEAD BREAD RECIPE
To prepare easy no-knead bread, pour the flour of your choice into a bowl (in the second bread I made, I used 300 of all-purpose and 100 of Manitoba), the instant yeast, the sugar, and the salt.
Mix everything well with a spoon, trying to distribute the ingredients evenly.
Add the water and mix well.
The first time I used a spoon, but the second time … I went as usual with my hands.
Leave the dough covered for 30 minutes.
After the time has passed, take the dough and fold it by taking a bit of dough from the outer perimeter and bringing it to the center of the loaf and continue this all around the circumference.
Let it rest for 15 minutes and then repeat the process a total of 3 times.
Now just cover the dough with plastic wrap and put it in the refrigerator where it will stay for a minimum of 6 hours and a maximum of 24 hours: for me, it was overnight, so about 12/13 hours.
When it’s time to make easy no-knead bread, take our bowl and after putting plenty of flour on the work surface, pour it over.
As you can see in the first photo, there are a lot of fermentation bubbles and the whole thing is quite sticky.
With your fingertips, spread out the dough for easy no-knead bread into a rectangle: mine is … let’s leave it, but anyway it’s rectangle-like!
Now make the folds as you see in the photos on the side.
Now fold the sides towards the center and make a slightly misshapen loaf but … it’s okay!
Then place in a clean bowl a cloth, and generously flour it.
Put inside the easy no-knead bread dough obtained after turns, folds, and more, sprinkle with a little more flour, and close the edges of the cloth and let it rise for 90/120 minutes or until doubled in volume.
Personally, I wrapped the cloth and bowl with a nice blanket to facilitate rising!
After the necessary time, you will find a nice puffed and soft loaf …
I used kitchen scissors to make cuts to facilitate rising but I must buy a razor blade and experiment with different and better decorations!
Now bake at 450°F for 30 minutes then lower to 430°F for another 20 minutes: it should become nicely puffed and golden!
Personally, before turning off the oven, I carefully took the bread in my hands and knocked on the bottom with my knuckles to ensure it sounded hollow!!
To cool it down I placed it on a wire rack (if you don’t have one, leave it diagonally supported against a wall, a baking tray, anything) to release the residual moisture that would make the bread softer …
