A few days ago I saved a box of vegetables and two green zucchinis were roaming around the kitchen, which today ended up in the easy puff pastry with zucchini and mint, a super simple savory pie that can be an appetizer but also a real dish with some tasty additions.
The zucchini or courgettes are an extremely versatile vegetable with a basic flavor that is perfect paired with more flavorful foods but also delicate ingredients, always depending on our personal taste.
With zucchini it’s very easy to prepare an entire menu from the appetizer like with the recipe for savory muffins with mortadella and zucchini to a tasty first course with the recipe for lasagna with arugula and zucchini to a genuine second course like the meatball and zucchini skewers a super tasty side dish with the recipe for gratinated zucchini and then finish with a dessert, that is the zucchini and chocolate cake a recipe I made some time ago without too many expectations and yet it’s really good!
For cooking the savory quiche, the zucchini filling is cooked for a few minutes in a pan and once the filling is completed, combining also julienned zucchini, cheese, Parmesan, and a fine chop of onions, the assembled savory pie will be baked in the oven at 350°F in static mode.
It’s delightful to taste the difference between the soft tender filling and the slices of zucchini on the surface, which remain just slightly crunchy!

- 1 package puff pastry (preferably round)
- 1 lb zucchini
- 2 eggs
- 1/3 cup fresh liquid cream
- 2 fresh green onions
- 1/2 cup grated Parmesan
- 2 oz provolone (or scamorza or shredded mozzarella)
- to taste extra virgin olive oil
- to taste mint (preferably fresh 3/4 sprigs approximately)
- to taste salt
- to taste pepper

FOR THE PREPARATION OF THE EASY PUFF PASTRY WITH ZUCCHINI AND MINT RECIPE
but also a dish in larger quantities maybe accompanied by a couple of hard-boiled eggs and two slices of bresaola …just saying, mind you!
Clean the green onions from the green part and the outer sheath, chop them finely.
Remove the ends of the zucchini, wash them under running water, keeping aside about twenty thin slices cut with a knife.
Grate the remaining amounts of zucchini into julienne and continue the recipe for the savory quiche with zucchini and a nice chop of fresh mint.
In a pan, put 2/3 tablespoons of extra virgin olive oil and when it sizzles, add the finely chopped green onion, letting it wilt with a tablespoon of running water.
Then add the julienned zucchini, continuing to cook until tender.
Then let cool and add the eggs, cheeses, and fresh liquid cream.
Keep a little grated Parmesan to sprinkle over the zucchini rounds before baking the quick puff pastry.
Season with salt and pepper and be generous with the chopped fresh mint, mixing the filling of the simple and tasty zucchini puff pastry.
Line the mold with the puff pastry, keeping the provided parchment paper and prick the bottom of the savory pie with a fork.
Pour the filling, leveling it well, and cover it all with the zucchini slices and then add the grated cheese.
All that remains is to bake as mentioned above, at 350°F static, cooking the zucchini and mint pie for about 35 minutes or according to the characteristics of our home oven.
