Thanks to a photo I saw on a French cooking site, today I prepared these light and easy tasty salmon and zucchini skewers!
Before cooking the FISH chunks, I preferred to marinate the salmon cubes for a couple of hours in a mix of extra virgin olive oil and lemon juice, which left a pleasant aroma while cooking.
Grab some rosemary sprigs and head to the kitchen to prepare this dish which was a main course for me but could also be a different appetizer…

EASY SALMON AND ZUCCHINI SKEWERS

Ingredients EASY SALMON AND ZUCCHINI SKEWERS
- 1.1 lbs salmon fillets
- 1 large zucchini (or 2 medium)
- 7 sprigs rosemary
- to taste salt and pepper
- 1 lemon
- 1/3 cup Extra virgin olive oil
- to taste balsamic vinegar of Modena

FOR THE PREPARATION OF THE EASY SALMON AND ZUCCHINI SKEWERS RECIPE
Cut the SALMON into chunks and place them in a bowl with 1/3 cup of extra virgin olive oil and the juice of about half a lemon. Mix well, cover with plastic wrap and refrigerate for at least a couple of hours.
After the marinating time, cut the zucchini into thin strips, preferably using a mandoline or a vegetable peeler.
Drain the salmon well and wrap each piece in a zucchini strip.
Skewer 2 salmon cubes onto a rosemary sprig and place each skewer on a baking sheet lined with parchment paper.
Season with salt and pepper and bake at 356/374°F for about 10 minutes or until fully cooked (be careful not to overcook it but to leave it juicy and tender)
Serve the salmon and zucchini skewers with a drizzle of BALSAMIC vinegar from Modena and very little extra virgin olive oil! Enjoy your meal!!

Salmon today is a fish with the famous Omega 3s that are so good for our body, and zucchini, a low-calorie vegetable cut very thin for quick and healthy cooking. A very quick and simple dish but so, so good!
