Eggplant Fan Dish

Ingredients

  • 1 eggplant
  • 1 tomato
  • 1 mozzarella
  • to taste basil
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil

Preparation

  • After washing, drying, and topping the eggplant with a sharp knife or a paring knife

    make 4-5 cuts to open the vegetable into a fan.

  • On each eggplant slice place slices of tomato and mozzarella.

  • Now add a few pieces of fresh basil and then add salt and pepper.

    Also add a little extra virgin olive oil and proceed to cooking.

  • Bake the eggplant fan seasoned with tomatoes and mozzarella in a baking tray lined with parchment paper at 390°F for about 20 minutes or depending on the characteristics of your oven.

  • Once cooked, let it cool a bit and then serve the eggplant fan at the table!
