EGGPLANT IN TUNA SAUCE RECIPE INGREDIENTS
- 1 eggplant (net weight 300g)
- 1/4 cup mayonnaise
- 2 anchovy fillets
- 2 tbsp pickled capers
- 8 caper flowers (for decoration)
- 3 oz tuna in oil
- to taste salt (Watch out for the salt in the anchovies!)

FOR THE PREPARATION OF THE EGGPLANT IN TUNA SAUCE RECIPE
Wash and remove the stem of the eggplant.
Slice it into about 1/2 inch thick pieces.
Grill them on both sides on a hot grill plate and as they cook, place them on a separate plate.
Let them cool completely and proceed to make the tuna sauce.
The tuna sauce is very simple because you just need to put the drained tuna from the oil, with the washed capers, anchovies, and mayonnaise in the mixer.
Operate the blades and blend all the ingredients into a smooth cream.
Adjust the creaminess of the sauce to your liking and also the saltiness according to your personal taste.
Arrange the grilled eggplant slices on a serving dish, then pour over the tuna sauce covering the eggplant.
Garnish with the caper flowers and some parsley leaves for color and serve at the table.
If it’s not mealtime, cover with plastic wrap and keep in the fridge until ready to serve.
