A very tasty side dish and sweet and sour prepared with round eggplants also excellent as an appetizer is the recipe I prepared today in my kitchen! Eggplants are a very versatile vegetable, highly digestible, low-calorie, and adapt to many combinations in the kitchen.
There are many varieties of eggplants such as round, violet, pearl, durona, baffa, and zebrina, and HERE you will find a lot of information, even for growing them on a balcony.

Ingredients for EGGPLANT SIDE DISH Recipe
- 4 eggplants
- 1 onion
- 1/2 oz raisins
- 3/4 oz pine nuts
- 3/4 oz walnut kernels
- 1 teaspoon sugar
- 1 bunch basil
- 1 small glass white wine vinegar
- to taste extra virgin olive oil
- to taste fine salt
- to taste black pepper

Preparation of Eggplant Side Dish Recipe
Remove the stems, wash and dry the eggplants. Cut them into cubes and sauté them with a little hot extra virgin olive oil. They must soften and brown on all sides.
Drain the eggplant cubes on kitchen paper.
Soak the raisins in warm water.
Sauté the chopped onion in a pan with a little extra virgin olive oil
Then add the drained and dried raisins, pine nuts, chopped walnuts. Add the eggplants, sugar, some torn basil leaves, white wine vinegar.
Season with salt and pepper and cook for 5/6 minutes. Serve this delicious eggplant side dish warm or cold. Enjoy this simple recipe!
