This succulent dish, also called eggplant cutlets or eggplant in carrozza, is made with eggplants, cooked ham, melted mozzarella, tomato sauce, and basil, and I’ve seen various cooking versions of this vegetable on the web, you know?
Personally, I simply dipped the slices of eggplants in beaten egg but if you want them even tastier, dip them first in flour then in egg.

Ingredients RECIPE EGGPLANT WIFE AND HUSBAND
- 2 eggplants (for me oval)
- 2 mozzarella
- 3.2 oz cooked ham
- 1 medium egg
- 11.6 oz ready-made cherry tomato sauce (Agromonte)
- to taste basil
- to taste salt and pepper
- to taste seed oil

FOR THE PREPARATION OF THE RECIPE EGGPLANT WIFE AND HUSBAND
Wash and remove the ends of the eggplants.
Cut them into slices about 3/8 inch thick.
Dip them in beaten egg and fry them on both sides.
Then let the excess fat drain on kitchen paper.
In the baking pan that will go in the oven, place a few tablespoons of tomato sauce, a few basil leaves, and preheat the oven to 356°F.
Place the eggplant slices on top of the sauce, then add the cooked ham, then the mozzarella slices and a second slice of eggplant.
Now add a sprinkle of grated parmesan then a few tablespoons of cherry tomato sauce.
Adjust with salt and pepper.
Bake the eggplant wife and husband and let it finish cooking for about 15 minutes or depending on the characteristics of your oven.
Before serving, add more basil and bring to the table just warm.
