Enriched Custard Cream with Mascarpone

On Instagram, I follow a Masterchef finalist, the lawyer and notary Cristina Nicolini, and I was very intrigued by a custard cream enriched with mascarpone (she calls it reinforced) and today, since I have to make a cake for a friend’s birthday, I decided to try making it.

The recipe for the cream is the classic one with corn starch, egg yolks, sugar, and vanilla aroma, but if you prefer, we can add organic lemon zest while heating the milk for the custard cream.

The addition of mascarpone when the cream is still warm makes it more delicate with an aroma of …mascarpone and it is very pleasant to spread while filling a dessert or tart.

  • 2 1/2 cups milk
  • 6 egg yolks
  • 1/2 cup corn starch
  • 1/2 cup sugar
  • 1 bean vanilla (or organic lemon zest)
  • 7 oz mascarpone

FOR THE PREPARATION OF ENRICHED CUSTARD CREAM with mascarpone

  • with the seeds from the opened vanilla bean in a saucepan, allowing it to gently heat.

    In a bowl, I mix the egg yolks with sugar and sifted corn starch.

  • When the milk begins to simmer and is almost boiling, I pour it while stirring with a hand whisk into the mixture of yolks, sugar, and cornstarch.

    I return to moderate heat and keep stirring until it thickens into a cream.

    I leave it on the heat for a few more minutes, always turning the mixture with the hand whisk.

  • With the cream still warm, I add the mascarpone, which will melt into the cream itself, releasing an intense aroma!

    If you want to make the cream very smooth, pass it through a sieve BEFORE ADDING THE MASCARPONE!

  • Cover with cling film and let it cool in the refrigerator.

    The mascarpone enriched cream is ready for an afternoon snack with cookies, to fill a soft tart with a smart mold, for whatever you prefer!!!!!

FAQ (Questions and Answers)

BIG QUESTION…. DID I LIKE THE mascarpone enriched custard? It is creamy and delicate, but for me, the vanilla aroma is somewhat lost, even though I used all the seeds from one bean…. maybe it’s better to add lemon zest as a flavoring ingredient!!!!!
