I am closing the year 2020 with yet another, let’s say the umpteenth, appetizer recipe APPETIZERS, specifically these filled and super easy puff pastry cups, another delightful way to use ready-made puff pastry or homemade.
So I don’t want to say anything about this 2020, I just say it was very heavy because … well, I think it has been very difficult for everyone, so I’ll leave it at that!

I often use puff pastry which pairs wonderfully with both sweet recipes and savory recipes, and these PUFF PASTRY CUPS filled are a simple container for savory creams and small salads with boiled or grilled vegetables, small beans, but also leftover pasta squares…
In short, there’s plenty of choice to deliciously fill these crunchy little containers, super easy puff pastry cups to fill deliciously!

For this recipe, I made 5 different fillings of which I’ll give you the ingredients as a suggestion because they’re just ideas that you can vary according to your personal taste.
The fillings for the savory puff pastry appetizer cups I made today are:
– ready-made Russian salad or
here’s my recipe;
– cherry tomatoes with feta cubes, a little oil, and a pinch of oregano;
– taggiasca olive mousse;
– creamy cheese and a roll of smoked salmon;
– boiled shrimp with mayonnaise.

How to further vary the fillings for the Filled and Super Easy Puff Pastry Cups?
We can use these small finger food containers also as fridge-clearers* because we can fill them with:
1. *leftover ragù sauce;
2. *peas with cooked ham (a classic side dish made with sautéed onion with a little oil, then add peas, even frozen, and finally cooked ham cubes);
3. boiled chickpeas with aromatic herbs;
4. *seasoned lentils (I love this dish made with sautéed onion with a little oil, then add pre-cooked lentils, a rosemary mixture, and a few tablespoons of tomato sauce);
5. at this time of year, we can also put cotechino cubes simply boiled;
6. cooked ham mousse
here’s my recipe;
7. capricciosa salad;
8. raw zucchini julienne cut with the mandolin, mixed with creamy cheese and aromatic herbs;
9. tuna mousse (natural tuna or well-drained from the oil, then blended with creamy cheese for a lighter cream, or add some mayonnaise with a few desalted capers and maybe half an anchovy…
and much more!

This is a creative appetizer a easy and tasty finger food that should be made and eaten, and especially if we prepare the mini portion puff pastry cups in advance, let’s fill them at the last moment, otherwise, the moisture of the fillings will make everything soggy!
You can also bake the filled puff pastry appetizer cups in shortcrust pastry cups in muffin molds for baking.

- 1 package puff pastry (for 16 cups)
- as needed cherry tomatoes
- as needed feta
- as needed extra virgin olive oil
- as needed dried oregano
- as needed salt
- as needed shrimp (fresh or frozen)
- as needed mayonnaise
- as needed salt
- as needed chives
- as needed taggiasca olives (the ones marked ALDI are super for me!)

FOR PREPARING THE FILLED AND SUPER EASY PUFF PASTRY CUPS RECIPE
Unroll the package of puff pastry on a counter or work surface for me.
Using a knife or a pastry wheel, cut 16 rectangles on the pastry by first dividing each side in half and then dividing the pastry again.
Place these pieces of puff pastry into each space in the muffin tray: I have 2 small ones and prepared both.
On top of each piece of puff pastry, I placed a square of parchment paper and then filled the cavity with dried beans or ceramic baking beans used also for shortcrust pastry… In short, I bake the puff pastry cups blind!
I then bake the trays at 392°F (200°C) for about 15 minutes or according to your oven’s characteristics.
Remove the dried beans and let the finger food with ready-made puff pastry cool completely.
Now proceed by combining the various fillings which are:
– wash and cut the cherry tomatoes, dice the feta too, and mix in a bowl, adding a little EVO oil and seasoning with salt;
– mix cooked shrimp with a little mayonnaise, season all with a pinch of chopped chives;
– blend together in the mixer creamy cheese and taggiasca olives, and adjust the saltiness;
– soften the creamy cheese by mixing vigorously, add some chopped parsley and cut the smoked salmon into strips, put in a piping bag, and fill and decorate my ready-made puff pastry cup;
– prepare the Russian salad by boiling the vegetables separately, or go to the deli and buy it ready-made, then fill the cup.
Here are the filled and super easy puff pastry cups ready!
