This summer flatbread with hummus and zucchini is one of those clever recipes that is prepared in a few minutes and conquers at the first bite.

Perfect for a light dinner after coming back from the beach or even as a quick break at the office, this flatbread combines the creaminess of hummus with the sweetness of grilled zucchini.
It’s a vegetarian idea that has nothing to envy from richer fillings: it satisfies, is balanced, and rich in Mediterranean flavors.

  • 1 zucchini (large or two small)

  • I wash the zucchini, trim, and slice them thinly lengthwise using a mandoline.

  • I grill these thin zucchini slices on a hot grill pan for 3-4 minutes on each side, with just a touch of oil and a pinch of salt.
