Flourless Hazelnut Cake

While organizing the pantry, I found a bag of hazelnut flour bought at Lidl and thought of making a flourless hazelnut cake without baking powder and with a handful of dark chocolate chips added before baking the cake.

This flourless and baking powder-free hazelnut cake is 7 inches [18 cm] in diameter, has an enveloping, intense flavor, and just a slice is enough to enjoy the aroma and be satisfied.

If you want to go all out, add a nice dollop of fresh whipped cream and… you’re good and happy!

I preferred to make a hazelnut cake actually with ONLY hazelnuts and without flour because it highlights the nutty taste more and is more genuine for me!

Ingredients

FLOURLESS AND BAKING POWDER-FREE HAZELNUT CAKE

  • 5.3 tbsp butter
  • 1/2 cup brown sugar
  • 1.2 oz acacia honey
  • 3 eggs
  • 2 cups hazelnut flour
  • 1/2 cup dark chocolate chips
  • 1 tsp vanilla extract

Steps

  • The recipe for the hazelnut cake without flour and without baking powder is very simple …

    1) I melt the butter in the microwave or in a double boiler over low heat

    2)I then add the light brown sugar with a spatula and mix well until almost dissolving the sugar granules.

    3)It’s time to pour the eggs into the mixture and using a flexible spatula mix the ingredients well, also adding the vanilla extract and honey.

    4) I now add the hazelnut flour mixing it well into the mixture.

    5) I line a mold with parchment paper, pour the batter and level it well, then evenly distribute the chocolate chips.

    6)All that’s left is to bake at 340°F [170°C] bringing it to cook in about 30/35 minutes, but always check well!

    7)I let the flourless hazelnut cake cool and … I’m ready for the tasting!

1) Instead of acacia honey, we can explore other delicate and light flavors like wildflower honey

2)Be careful with baking …the flourless hazelnut cake with honey darkens quickly considering the color of the ingredients, but make sure it’s well cooked in the center!

3)It’s a creamless dessert and keeps for 3/4 days covered with aluminum foil, but I assure you it will be gone in no time!

4)If you want to serve it indulgently, a nice dollop of whipped cream or even a few spoonfuls of crème anglaise!
