Fregola with sausage and zucchini a very tasty dish with “ fregola“ a typical Sardinian food that pairs well with many different sauces for always extraordinary dishes!
I preferred to do everything in one pot, meaning that after just browning the julienned zucchini, I added the sausage and as it cooked, I added the fregola and cooked it risotto-style with the addition of vegetable broth.
At the end of cooking, the fregola is very creamy, and the dish is flavorful and inviting!
I didn’t add cheese or pecorino before serving, but if you like it… it fits perfectly!

FREGOLA WITH SAUSAGE AND ZUCCHINI

Ingredients
- 11 oz fregola
- 10.5 oz sausage
- 1 clove garlic
- 2 zucchini (julienned)
- 1 shallot
- 1/4 cup dry white wine
- to taste extra virgin olive oil
- to taste salt
- to taste pepper

Steps
In a saucepan add a couple of tablespoons of extra virgin olive oil and brown a clove of garlic in its skin.
Remove the garlic and add the finely chopped shallot.
Remove the casing and add the crumbled sausage, cooking it for 5 minutes while stirring well.
Pour the wine and let the alcohol evaporate.
Wash and julienne the zucchini and add them to the sauce, cooking for a few minutes.
In the same pot, add the fregola and gradually add the vegetable broth, cooking for about 10/12 minutes.
At this point you can also add cheese if you like, and after mixing the ingredients well, serve on individual plates.
I have to be honest … the more I eat it, the more I love Sardinian fregola!
