Easy, colorful, and very fragrant, these crostini with fresh cheese, cherry tomatoes, and pesto are the perfect idea for a quick summer appetizer or for a tasty APERITIF on the terrace. Just a few ingredients and in 10 minutes you bring all of summer to the table.

Ingredients

  • 4 slices white bread
  • 4.6 oz spreadable cheese (or robiola)
  • 8 cherry tomatoes (or cherry)
  • 2 tablespoons Genovese pesto
  • to taste basil
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Tools

  • Cast iron grill
  • Pans

Let’s prepare these simple and tasty triangles

  • Lightly toast the slices of bread in a pan or on the grill until they have that nice golden color

    As soon as they are warm, cut them in half diagonally and generously spread the fresh cheese on each crostino.

  • Add some wedges of cherry tomato (yellow and red) washed and dried on each slice.

    Season with a drizzle of oil, a pinch of salt, and pepper.

  • Complete these very quick crostini with white bread by adding a little pesto to each savory tart and some fresh basil leaves.
    And you go straight to the table!

Storage

These crostini should be enjoyed immediately after preparation to keep the bread crunchy and the tomatoes fresh. However, you can toast the bread and cut the cherry tomatoes in advance, then store them separately in the fridge for up to 3-4 hours maximum.
