These fresh fruit sweet sandwiches are an idea, a SIMPLE QUICK and tasty RECIPE for a snack for everyone, adults and children, and we can use all the seasonal fruit available.
I chose strawberries and kiwi but clearly, we can add all the summer and winter fruits which, wrapped in the soft and delicious cream, will surely be appreciated by everyone.
I then preferred not to add other sugars, but I could have …
1) dust with powdered sugar each tartine with fruit and sweet cream, but also
2) melt a square of dark chocolate or milk chocolate and draw some squiggles over each slice of white bread filled with sweet cheese mousse to make it even more inviting and appetizing!
Clearly, nothing prevents us from putting some canned fruit which, however, we must drain very well, dab with absorbent paper, and maybe sprinkle with powdered sugar!
With these doses, I made 4 filled sweet sandwiches but as you can see, the layer of filling is abundant so … feel free to measure as you like!
Instead of cutting the slices of soft white bread filled with white cream and mixed fruit, we can make small sandwich squares and serve them on a tray composing other sweets to complete the dessert buffet, especially now that we are heading towards the beautiful season and the fruit to choose from will be plentiful!
Guys, I would say there is something for everyone with this smart sweet and super-fast recipe with fresh fruit!

Ingredients for the Fresh Fruit Sweet Sandwiches Recipe
- 2 slices white sandwich bread
- 1 kiwi
- 8.8 oz mascarpone
- 4.6 oz natural white yogurt
- 2.1 tbsp powdered sugar
- 2.5 oz strawberries (hulled)

FOR THE PREPARATION OF THE FRESH FRUIT SWEET SANDWICHES RECIPE
1) I wash the strawberries very quickly removing the hull, dry them by dabbing with appropriate paper, and cut them into fairly small pieces;
2) I peel the kiwi and cut it into pieces about half an inch thick (I always have trouble with measurements haha, so just eyeball it!).
3) In a bowl, I put the mascarpone, natural or sweet white yogurt to your liking, and the powdered sugar;
4) mix well to combine the ingredients, creating a wonderful soft white cream!
5) Divide the cream depending on the varieties of fruit I intend to use. I split it and added kiwi to one part and strawberries to the other.
6) On a work surface, I place 4 slices of soft white sandwich bread without crust;
7) I spread them with delicious white cream with fruit, then make the sandwiches by overlapping each filled slice with the remaining ones.
8) I wrap each sandwich filled with sweet white cream and fruit in cling film and leave it in the fridge until ready to cut and enjoy as a snack or quick sweet break.
9) I cut each slice of soft white bread into 4 triangles and … enjoy your meal!

Annalisa advises…
1) As I wrote above, to make these quick sweet snacks, we can use a lot of other fruit, just make sure it’s not too juicy and that these easy and quick fruit treats are eaten quickly because the bread absorbs and becomes soggy … Personally, I wouldn’t like it, so in a couple of hours, we devoured them 😁!
2) Variation of the quick and sweet fruit sandwiches is …. not to put the fruit but maybe add
– chocolate chips to the fabulous sweet white cream;
– colored sprinkles;
– crumbled meringues;
– mixed candied fruits;
– citrus peels made by us home cooks, putting lemon and orange peel in a small pan with water and sugar where the sugar must be double the amount of water, we let them soften and candy for a few minutes at low flame, then let them cool and harden, and then we cut them with scissors into squares to add to the creamy filling.
We can also make sweet sandwiches with ricotta and Nutella cream always using the quick white bread and we can also make gluten-free sweet sandwiches with the appropriate bread.
