The lemon gratinated sea bream fillet is a simple and tasty oven-baked main course with an aromatic breading.
How to make the breading for sea bream fillets more appealing? First of all, I prefer to use white sandwich bread (pancarrè) instead of plain breadcrumbs because it has a coarser texture that I find tastier.
You can add small pieces of sun-dried tomatoes in oil, season with a splash of dry white wine, add capers and olives, chop fresh cherry tomatoes (few seeds varieties like datterini) and mix them into the breading, and much more!
Can you prepare the oven-gratinated sea bream fillets with frozen fish? Certainly — in fact you will most likely find sea bream already filleted and it will be much quicker and more convenient to use them without a trip to your trusted fishmonger!

Ingredients
- 4 fillets sea bream
- 5 slices white sandwich bread (coarsely chopped in a food processor)
- 1 clove garlic (finely chopped)
- to taste lemon zest (grated)
- to taste parsley (fresh and chopped)
- to taste extra virgin olive oil
- to taste salt
- to taste lemon slices (optional, for garnish)

Preparation
To prepare this simple and delightful fish main course, the oven-gratinated sea bream fillet, first of all make the breadcrumb mixture (panure) that will cover the fish.
In a food processor place the slices of white sandwich bread, the parsley, the lemon zest, a pinch of salt, pepper and the garlic clove with the core removed.
Chop the ingredients without pulverizing them.
Adjust seasoning with salt and pepper.
Place the sea bream fillets on a baking tray lined with parchment paper, brushed with a little oil.
Fill the fillets with the aromatic breading and drizzle a little oil over them.
Bake in a conventional oven at 356°F for about 15 minutes or according to the characteristics of your oven.
