Today I made the Greek pita or Arabic bread which was our bread for lunch…
The recipe is very simple, with these ingredients you get about 6, I made them too thick (and they were only 4) but they are excessively large!!
The Greek pita is a very soft leavened bread that lends itself to being stuffed with meat, vegetables, and is a great way to accompany our dishes.
It is also served with falafel, baba ganoush or melitzanosalata, gyros, hummus of chickpeas …and it is delicious!!

- 7 oz All-purpose flour
- 3.5 oz Manitoba flour
- 1 tsp Fresh yeast
- 7 oz Water (approximately)
- 1 tsp Salt

Preparation GREEK PITA RECIPE
To prepare the Greek pita or Arabic bread
we pour the flour into a bowl, mixing them with a hand whisk.
We dissolve the fresh yeast with lukewarm water.
Then pour the liquid over the flours and start kneading everything.
When the dough begins to come together, we can add the salt.
Continue working on the board and make a dough ball to let rise for 40/45 minutes.
Divide the dough into 6 or more balls and with the help of a little flour, make pita circles similar to flatbreads.
Cover them with a cloth and let them rest for about 20/30 minutes.
Before cooking them, I brushed them with a little olive oil and a rosemary mixture!
Cook the pitas in a non-stick pan, letting them puff up for a few minutes on both sides.
