Green Bean, Potato, Tuna, and Hard-Boiled Egg Salad

A green bean, potato tuna, and hard-boiled egg salad today, a dish that can stand alone and is very tasty in its simplicity!

The big salad is perhaps more of a summer than a winter dish, but I believe it can always save a meal, and we can add or remove ingredients as we like to make it rich and also very delicious!

Ingredients

  • 14 oz green beans
  • 1 jar tuna in oil (preferably in glass)
  • 2 potatoes
  • 2 hard-boiled eggs
  • to taste extra virgin olive oil
  • to taste salt
  • to taste salt
  • to taste Taggiasca olives (pitted)

Steps

  • 1) First, after cleaning the green beans by removing the two ends and soaking them in water to ensure maximum safety, boil them in salted water for 10 minutes no more, because the green beans should remain almost crunchy!

    2) Boil the potatoes as well for about 20 minutes and let both the green beans and potatoes cool.

    3) For this homemade and simple salad, shell the hard-boiled eggs and cut them into wedges.

    4) In the bowl, place the green beans, drained tuna, diced potatoes, and pitted olives.

    5) Dress with extra virgin olive oil, salt, and pepper, and if you like, a splash of balsamic or classic white wine vinegar to taste… and finally add the hard-boiled egg wedges.

    6) If we don’t enjoy the salad of tuna, boiled potatoes, Taggiasca olives, and hard-boiled eggs immediately, we can cover it with plastic wrap and taste it later during the meal.

The big salad of tuna, green beans, hard-boiled eggs, and olives is versatile for many additions, and we can complete it with sun-dried tomatoes, a nice chop of fresh parsley, but also if you like, some artichokes in oil or other preserved vegetables.
