Grilled Marinated Squid

I love fish but honestly, I don’t prepare it often at home. I prefer (smartly) to reserve a table at an affordable restaurant near Ravenna when I go to the seaside in Romagna and gorge on fried dishes and hot and cold appetizers!

Squid are mollusks that require perfect cleaning that I preferred to leave to the skilled hands of the fish counter clerk because it’s necessary to

1) wash the squid well;

2) detach the tentacles with your hands from the rest of the body, thus also extracting the innards,

3) remove the internal cartilage;

4) thoroughly empty the pouch and rinse the squid well;

5) remove the skin by cutting and pulling it with just your fingers;

6) now clean the head thoroughly by removing the beak.

Cleaned SQUID can be stored in the refrigerator for one day and can also be frozen and consumed after 30 days.

Large SQUID take generally 40 minutes to cook, while smaller ones take about 15/20 minutes. For cooking times, large squid require 30-40 minutes, while smaller, softer, and more tender ones are cooked in 15-20 minutes.

Ingredients for the GRILLED MARINATED SQUID recipe

  • 1.75 lbs small and cleaned squid
  • 2 cloves garlic
  • 1 bunch chopped parsley
  • 1 bunch basil
  • 1 lemon
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

FOR THE PREPARATION OF THE GRILLED MARINATED SQUID RECIPE

  • 1) I rinse the squid under running water, dry them, then place them in an airtight container with extra virgin olive oil, lemon juice, garlic slices, and fresh chopped parsley.

    2) I close the container and let them marinate in the refrigerator for about an hour.

    3) After the marination time, I put the griddle on the flame, wait until it gets nice and hot, and then cook the squid, checking the flame and time based on their size.

    5) Once cooked, serve the grilled marinated squid seasoned with salt, pepper, EVO oil, and lemon, and accompanied by a fresh mixed salad of the season!

1) If we don’t want to make our kitchen a home barbecue with that smell that perhaps remains unchanged for a couple of days, I cook the marinated squid in the oven considering the cooking times based on their size.

2) We can prepare a variation of the grilled marinated squid recipe… cutting them into rings always after the marination time and maybe to make them crunchy and tasty, passing them in breadcrumbs or better yet in 3 slices of toast bread minced with a mixer and then proceeding to cooking which will clearly be shorter since the squid rings have a small size!

3) I recommend eating the grilled marinated squid as soon as they’re cooked, otherwise… we will have some not-so-tasty rubber bands!
