GRILLED OCTOPUS with chimichurri sauce

I saw another picture on a French review site about restaurants or other dining places and decided I would try to make the dish, and here is the recipe for grilled octopus with chimichurri sauce!

I must say the result is very tasty because the chimichurri sauce with a base of slightly spicy parsley complements the delicacy of the chickpea puree and the tender texture of the boiled octopus, then grilled for a few minutes!

HOW DO YOU BOIL OCTOPUS??? Million-dollar question, huh!!
Surely you have read, just like me, a lot of tips on hitting the octopus with various tools, adding cork stoppers, and…so much more!

From what I know, the octopus can be cooked in water, adding some herbs, or without water since it releases plenty of liquid sufficient for cooking…
Personally, I cooked it in water with some bay leaves for about 1 hour (30 minutes for every 500 grams, roughly a pound).

The chimichurri sauce is a preparation based on parsley, garlic, scallion, and many other spices, made spicy by the presence of fresh chili and is perfect to give a boost to a product like boiled octopus that has a basic taste!

I also added a chickpea puree just seasoned with a drizzle of olive oil and salt and pepper….

GRILLED OCTOPUS WITH CHIMICHURRI SAUCE

Ingredients RECIPE GRILLED OCTOPUS with chimichurri sauce

  • 2.2 lbs octopus
  • 2 leaves bay
  • 0.88 oz parsley
  • 1 fresh scallion (about an inch, only the white part)
  • 1 1/2 clove of garlic
  • 1 pinch cumin seeds
  • 2 pinches oregano
  • to taste chili pepper (fresh)
  • to taste salt and pepper
  • to taste extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 can cooked chickpeas (about 8 oz)
  • to taste salt and pepper
  • to taste extra virgin olive oil

FOR THE PREPARATION OF THE RECIPE GRILLED OCTOPUS with chimichurri sauce

  • Put some water in a saucepan, adding the bay leaves, and on high heat, wait for it to boil.

    Clean the octopus by removing the eyes, the beak, and the insides and rinse the mollusk very well.

    When the water boils, immerse the octopus holding it by the head and raising and lowering the tentacles to curl them.

    Cover the saucepan with a lid and let it cook for about 30 minutes for every pound (500 grams) of octopus weight.

    Turn off the heat when cooking is complete after checking the tenderness by piercing the octopus with a fork or a wooden skewer.

  • Clean the fresh scallion and the fresh chili by removing the internal seeds.

    Dice both vegetables and the half clove of garlic.

  • Finely chop the fresh parsley and place all these ingredients in a bowl.

  • Then add the cumin seeds, the oregano, and season with olive oil, lemon juice, and adjust with salt and pepper.

  • Using an immersion blender, puree the cooked chickpeas (reserve a tablespoon of whole legumes to add before serving if you like), seasoning the puree with oil and adjusting with salt and pepper.

  • On the hot grill, grill the octopus for a few minutes on each side, and in the meantime, arrange the plates.

    Make a bed with the chickpea puree, place the grilled octopus on top, and season with the chimichurri sauce.

    Add, if you like, some cherry tomatoes in pieces for color and some whole chickpeas…
