A super easy recipe for a delicious side dish with grilled onion slices! These onion chips can be prepared and cooked in 10 minutes, are just the right amount of savory and very tasty, perfect if served as a side with a simple roasted or pan-cooked meat and/or fish dish.
I intentionally did not use the mandoline (I’ve renovated the kitchen and I SWEAR I don’t know where the heck I packed this and other tools, darn me) and tried to make reasonably thin slices with a knife, which I then sprinkled with grated cheese and immediately baked for a quick cooking.
The onion is a very useful ingredient in the kitchen, and for this preparation, I used the yellow variety, but the white onion can also work as long as they are of good size to have fairly large slices that remain compact during cooking, also due to the presence of grated cheese that acts as a delicious “glue”!

Ingredients GRILLED ONION SLICES RECIPE
- 1 Onion (large)
- 5 oz Parmigiano Reggiano DOP (grated)
- 2 tbsp extra virgin olive oil
- to taste pepper

FOR THE PREPARATION OF THE GRILLED ONION SLICES RECIPE
I peel the white or yellow onion and slice it very thinly, use the mandoline or be careful with your fingers!
I line the baking sheet with parchment paper and brush a bit of EVO oil over it, spreading it over the entire surface.
Then I arrange the onion slices on top, spacing them a little apart and making sure they do not overlap!
On top of each onion slice, I place some Parmigiano Reggiano (or Grana according to preference), trying not to spill over the vegetable and pressing it slightly with a table spoon.
The layer of grated cheese must be abundant, don’t be stingy, please!
I then bake at 392°F (200°C) until I see the grated cheese melting with the onion and slowly becoming golden brown.
I let the onion chips with Parmigiano cool completely, and carefully after removing them from the baking sheet, I serve them!
These grilled onion slices are very good and very simple!
